MEATLOAF | PINOY EMBUTIDO

When I think back to my childhood, the one food that pops into my head first is my mom’s famous meatloaf. It was always a comfort on those cold rainy days when we would be bundled up under blankets by the couch watching cartoons. The aroma of this dish still brings me back to memories of family and happiness. One thing I remember is she would put this sauce on the side that was a bit sweet; it really brought out the flavors in the meatloaf well. This recipe has been passed down through generations and will continue on as long as moms (and dads) are cooking for their families!

Ingredients

  • 1 kg ground pork
  • 1 kg ground beef
  • 3 pcs. egg
  • 2 stalks celery, chopped
  • 1 small pc. red bell pepper, chopped
  • 1 small pc green bell pepper, chopped
  • 1 cup carrots, chopped
  • 1 pc. onion, minced
  • ½ tsp. ground pepper
  • ¼ cup soy sauce
  • 1 pc. Knorr cube, shredded
  • 2 small cans of tomato sauce

Directions

  1. Combine all ingredients except for the tomato sauce.
  2. After mixing, form the meat into a large ball and place it in a large casserole. Top with tomato sauce.
  3.  Cook on low fire for 1-1.5 hours.
  4. Serve and enjoy this meatloaf bursting with flavors.
