STEAMED PAMPANO WITH BLACK BEAN SAUCE | POMFRET FISH

Fish is an important part of our diet. It’s not only high in protein, but it also provides us with omega-3 fatty acids and minerals like calcium and phosphorus. But there are many different types of fish out there, so what do you know about pomfret? If you’re a beginner to the kitchen or just want to learn more about this delicious fish, keep reading!
Pomfret is a type of saltwater fish that is found primarily in Asian waters. There are three varieties: Grey, Black and Silver Pomfret. They all have firm flesh, giving them a sweet taste when cooked properly. They can be prepared by any cooking technique – frying, baking or braising – but this recipe below involves steaming the fish “steamed pampano” which ensures that the flavor from the steam reaches each part of the flesh equally. In China, it’s called “zheng yu”.

 

Ingredients

  • 1 large or 2 medium-sized pampano or pomfret fish
  • 3 pieces of scallions cut into 2-inch thin strips
  • 1 piece 4-inch ginger, julienned
  • 1/4 cup chopped cilantro
  • 3 tablespoons of light soy sauce
  • 5 tablespoons of water
  • 2 teaspoons of sugar
  • 1 tablespoon of cooked black beans ground
  • 1/3 cup of cooked black beans
  • 2 tablespoons of vegetable cooking oil
  • Dash of salt and pepper

 Directions

  • Remove the gills and gut the fish and clean thoroughly.
  • In a small cup, mix together the soy sauce, sugar and water then set aside.
  • Fill a large pot or pan with water halfway and bring to a boil then turn it off
  • Carefully blanch the whole fish for 30 seconds to 1 minute being careful not to scrape the skin with the thong
  • Lightly sprinkle the fish with salt and pepper
  • Place a few ginger and scallions inside the belly and on top of the fish
  • Line the steamer with a few chives or scallions before placing the fish
  • Steam the fish for 15 to 20 minutes depending on the size of the pampano
  • Meanwhile, saute the remaining ginger, scallions, cilantro, and black beans until soft
  • Pour in the soy sauce mixture until it boils
  • Pour the mixture over the steamed fish and garnish with a few fresh scallions or parsley.
  • Serve your steamed pampano!
