Ingredients
- 1 Salmon Fish fillet (Sockeye, Atlantic or Coho)
- 1/2 cup Salt
- 1/2 cup Sugar
- 1/2 cup Maple Syrup
- 4 tablespoons Cooking Oil
- Salt and Pepper to taste
Directions
- Wash, clean and dry the fish and lay it flat on a container
- Cure the fish by sprinkling with equal parts of salt and sugar on both sides and let it sit for 20 minutes
- Rinse the fish in ice water then pat dry with a paper towel
- Pre-heat oil in a pan or over medium-high heat.
- Fry the salmon for about 3-5 minutes each side until crispy and golden.
- Glaze with maple juice
- Serve hot with your favorite salad or use it as a topping for your rice bowl.
