LENGUA IN MUSHROOM SAUCE

Ingredients:

  • 1 1/2 lbs beef tongue (lengua), cleaned and trimmed
  • 4 cups water
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup milk
  • 1/2 cup sour cream
  • 1/2 cup chopped mushrooms
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • 2 tbsp vegetable oil
  • 1/4 cup chopped fresh parsley, for garnish

Instructions:

  1. In a large pot, bring the water to a boil. Add the beef tongue and boil for 10 minutes. Drain the water and rinse the tongue under cold water.
  2. In a separate pot or Dutch oven, heat the vegetable oil over medium heat. Add the onion and garlic and sauté until the onion is translucent.
  3. Add the beef tongue to the pot and cover with water. Bring to a boil, then reduce the heat to low and simmer for 2-3 hours, or until the tongue is tender.
  4. Remove the beef tongue from the pot and let cool. Once cooled, slice the tongue into 1/4 inch thick pieces.
  5. In a small bowl, whisk together the cream of mushroom soup, milk, and sour cream.
  6. In the same pot, add the chopped mushrooms and dried thyme. Cook for 2-3 minutes, or until the mushrooms are tender.
  7. Pour the mushroom soup mixture into the pot and stir to combine. Add the sliced beef tongue to the pot and stir to coat in the mushroom sauce. Season with salt and pepper to taste.
  8. Let the dish simmer for 10-15 minutes, or until the sauce has thickened and the beef tongue is heated through.
  9. Serve hot with steamed rice and garnish with chopped fresh parsley.
