Ingredients: For the Lumpia Wrapper:

  • 1 cup all-purpose flour
  • 1 egg
  • 1/4 tsp salt
  • 1 1/2 cups water

For the Filling:

  • 1/2 lb pork, boiled and shredded
  • 1/2 lb shrimp, boiled and chopped
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 1/2 cup jicama (singkamas), julienned
  • 1/2 cup carrots, julienned
  • 1/2 cup green beans, sliced
  • 1/2 cup cabbage, shredded
  • 1/2 cup peanuts, finely chopped
  • 1/4 cup brown sugar
  • 1/4 cup soy sauce
  • 2 tbsp cooking oil
  • Salt and pepper, to taste

For the Sauce:

  • 1 cup chicken broth
  • 1/4 cup cornstarch
  • 1/4 cup brown sugar
  • 1/4 cup soy sauce
  • 2 cloves garlic, minced
  • 2 tbsp cooking oil
  • Salt and pepper, to taste

Instructions:

  1. In a large mixing bowl, combine the flour, egg, salt, and water. Mix well until the batter is smooth.
  2. Heat a non-stick pan over medium heat. Pour 1/4 cup of the batter onto the pan and tilt the pan to spread the batter evenly. Cook the wrapper until set, then transfer it to a plate. Repeat this process until all the batter is used up.
  3. In a large wok or frying pan, heat the cooking oil over medium heat. Sauté the garlic and onion until fragrant.
  4. Add the boiled and shredded pork, chopped shrimp, jicama, carrots, green beans, and cabbage to the pan. Stir-fry the mixture for 2-3 minutes, or until the vegetables are slightly softened.
  5. Add the chopped peanuts, brown sugar, soy sauce, salt, and pepper to the pan. Stir-fry the mixture for another 2-3 minutes, or until the sauce has thickened and the filling is well-coated.
  6. To make the sauce, combine the chicken broth, cornstarch, brown sugar, soy sauce, garlic, salt, and pepper in a small saucepan. Heat the mixture over medium heat and whisk continuously until the sauce thickens.
  7. To assemble the fresh lumpia, place a lumpia wrapper on a plate. Add a spoonful of the filling onto the wrapper and spread it out evenly. Roll the wrapper tightly around the filling, tucking in the ends to seal the lumpia. Repeat this process until all the filling is used up.
  8. Serve the fresh lumpia with the sauce on the side for dipping.
