Craving for some pasta with creamy soup? We got your back with Sopas. A traditional Filipino version of Chicken Noodle Soup best known as a breakfast food and a snack “merienda” that will surely satisfy your taste buds. Being elbow macaroni as the main ingredient, the perfect blend of the chicken, vegetables (mostly carrots and cabbages), hotdog cuts and hot creamy milky soup is truly a piece of pleasure in one’s stomach. It is best to indulge in this exemplary soup during cold rainy days especially when it’s still piping hot to keep you warm plus the pleasant feeling of how the soft macaroni dissolves in your mouth.
Ingredients
- 1 2/3 cup Macaroni Pasta
- 2 tablespoon butter
- 6 cloves Garlic, minced
- 1 large Onion
- 1 1/2 cup Carrots chopped
- 1 stalk Celery chopped
- 2 pcs Chicken breast (boiled with carrots, celery, pepper corn and then shredded)
- 2 tablespoon Fish sauce
- 2 liters water (1 liter chicken stock from the boiled chicken breast)
- 1 pc Knorr Chicken cube
- 1 can Evaporated milk
- 1 medium sized Cabbage
- Salt and Pepper to taste
Directions
- Heat butter in a deep pot over medium heat
- Saute garlic and onion until soft
- Add carrots and celery and saute for 2 minutes
- Add the boiled shredded chicken and stir occasionally for 2-3 minutes
- Season with fish sauce
- Add 8 cups of water and bring to a boil
- Stir in the Knorr chicken bouillon cubes
- Add the macaroni noodles
- Season with salt and pepper
- Stir in the cabbage and simmer for 5 minutes
- Serve and enjoy your sopas
