BEEF STEW | KALDERETANG BAKA RECIPE

This beef stew or  Kaldereta recipe is perfect for someone who wants to make a meal without too much fuss. It’s also great because it freezes well and can be made in advance. Give it a try today!

Ingredients

  • 1 1/2 kilo beef chunks
  •  ½ kilo beef liver cut into 2-inch pieces
  • 1/2 cup Olive Oil
  • 8 cloves Garlic, minced
  • 1 large Onion, diced
  • 5 Roma Tomatoes, quartered
  • 2 pieces Chili Pepper, minced
  • 3 large Green Bell Peppers, diced
  • 3 large Red Bell Peppers, diced
  • 3 cups beef stock
  • 2 tablespoons Tomato Paste
  • 1 ½ teaspoon cornstarch
  • ½ cup Green Olives, pitted
  • ¾ cup All-Purpose Cream
  • ¾ cup Cheese, Grated
  • Salt & Pepper to taste

Directions

  1. In a casserole, saute garlic, onion, tomatoes, and diced peppers.
  2. Add in the beef and liver.
  3. Cook for about 15 to 20 and take out the liver and set aside to cool down.
  4. Stir in the tomato paste and beef stock.
  5. Bring to a boil and lower the fire and let it simmer until beef becomes tender.
  6. Dilute the cornstarch with 1/4 cup of water and gently stir in the mixture.
  7. Grate liver and add into the mixture together with the olives.
  8. Allow sauce to thicken and add in cream and cheese.
  9. Add Salt & Pepper to taste
  10. Serve hot and enjoy your beef stew Kaldereta
