I hope you are having a great week so far! I have been cooking up some Filipino Pork Adobo recently and thought it would be nice to share the recipe with all of you. This dish is traditionally made in the Philippines, which is an island country located in Southeast Asia. The Ingredients used are typically chicken or pork that has been marinated overnight in soy sauce, vinegar, garlic, and bay leaf before being cooked for hours over low heat. Ingredients

  • 1 kilo pork picnic or side bacon belly (cut into bite-sized cubes)
  • 1 cup soy sauce
  • 1 cup white vinegar
  • 6 crushed garlic cloves
  • 3 pcs. laurel (bay leaves)
  • 1 teaspoon ground pepper
  • 1 cup water
  • 1 tablespoon sweet relish
  • 1 tablespoon Mang Tomas all-purpose sauce

Directions

  1. In a large bowl, mix together soy sauce, vinegar, bay leaf, portion of garlic, and pepper. Marinate pork overnight.
  2. Add 1 cup of water and boil the pork including the marinate sauce for 10 minutes.
  3. Remove the meat and set aside the sauce.
  4. Preheat the oven to 350°F and cook the meat on a baking sheet for 20 to 30 minutes.
  5. After cooking the pork, put them back to the boiled sauce and let it reboil for 10 minutes.
  6. Add the Mang Tomas and sweet relish if you want your adobo to be a bit sweet.
  7. Cover and let simmer until pork becomes tender.
  8. Serve hot and enjoy.
